There are some pork chops in the fridge that are dying to be cooked and I thought we would do something different with them. When I think pork chops I usually think Saucy Pork Chops - one of my all time favorite meals. Cream of mushroom soup, ketchup, worcestershire, onions, mushrooms - mmmmmmmmmm - so easy and so good. Tonight I decided to try grilling them with zucchini and onions. I found a recipe for a sauce that had rice vinegar, soy sauce, pineapple and brown sugar in it. I added the sauce to the zucchini and onions and grilled the chops with it and it turned out great! We ate it with baked potatoes and it worked really well together. I think I found a new favorite pork chop recipe. I think next time I will add some carrots and maybe some summer squash as well. The vegetables were really tasty with the sauce and I think next time I will try serving it all with rice and maybe try it with chicken.
I can't believe how fast the summer is flying by and the kids are growing up way too fast. We have been on a few hikes and the kids love to be up in the mountains so I think we will keep that up. It is so nice being close to the mountains here in Utah. A quick 5 - 10 minute drive and you can be up Little or Big Cottonwood Canyon and on your way. New family goal: go hiking at least twice a month.
